- 300 grams frozen forest fruits
- splash of water
- 100 ml unscented bone broth
- 200ml whipped cream
- 10 ml vanilla extract
- 50 grams powdered sugar substitute (I used Steviala frost)
- 4 gelatin sheets
- 3 tablespoons of water
Heat the frozen forest fruits in a saucepan with a dash of water.
Add the unflavored bone broth and let it reduce completely.
Then puree this with a stick blender to a smooth sauce. Let this cool down.
In a bowl, mix the whipping cream with vanilla extract and sugar substitute.
Soak the gelatine leaves in cold water for 5 minutes.
Heat 3 tablespoons of water in a pan and melt the gelatine leaves.
Add this together with the forest fruit sauce to the whipped cream.
Pour this into molds and let it set for at least 3 hours.
